Onion Frittata BitesFrittata is a great mixture of an omelette and quiche. This low calorie recipe is an easy, quick and delicious treat for your next brunch party!

Onion Frittata Bites

PREP TIME: 10 Minutes COOK TIME: 20 Minutes SERVING SIZE: 2 Frittata

Makes 12 Servings


Ingredients

1 tsp. extra-virgin olive oil

2 cups Vidalia onion, minced

1 ½ cups liquid egg substitute

4 TB. Grated Parmesan cheese

½ tsp. salt

½ tsp. freshly cracked black pepper

¼ cup fat-free sour cream

48 (1/2 in.) pieces chives

Instructions

  1. Preheat the oven to 350 degrees F. Lightly coat an 11×7-inch baking dish with cooking spray.
  2. In a nonstick skillet over medium heat, heat olive oil. Add onion, and cook for 15 minutes, stirring occasionally, or until golden brown. Spread onions in a single layer in the prepared baking dish.
  3. In a medium bowl, combine egg substitute, 2 tablespoons Parmesan cheese, salt, and pepper. Pour egg mixture evenly over onions, and sprinkle remaining 2 tablespoons Parmesan cheese over top.
  4. Bake for 20 minutes or until set. Cool slightly before cutting into 24 pieces. Top each piece with ½ teaspoon sour cream and 2 chive pieces. Serve immediately.
