TACO SALAD IN A JAR
  • 3-4 tablespoon Salsa Lime Vinaigrette
  • 2 tablespoons diced red and green peppers
  • 2 tablespoons, corn (frozen or canned)
  • 2 tablespoons diced red onion
  • 2 tablespoons low-fat Mexican cheese
  • 2 tablespoons canned black beans, rinsed and drained
  • 1/4 avocado, diced
  • 1/4 cup leftover turkey taco meat (mix turkey meat with taco seasoning or use leftover turkey chili meat)
  • 1/4 cup diced tomato
  • 1 cup finely chopped romaine lettuce
  • 1/4 cup salsa
SALSA LIME VINAIGRETTE
  • 1/4 cup salsa
  • 1-2 sprigs cilantro, finely chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
-Mix all the ingredients together in jar.
-Pour salad dressing in the bottom of the jar.
-Create pretty layers adding one at a time: peppers, corn, onions, cheese, beans, avocado.
-Add turkey taco meat and then diced tomatoes. Top with lettuce until jar is filled almost to the top.
-Screw on the lid and refrigerate until ready to serve (within 24 hours).
-When ready to serve, shake jar and enjoy.
