Happy New Year! I thought this was a good recipe to make ahead; have it for a dinner or lunch. For people who are going dairy free: you can omit the yogurt. If you are doing Paleo or Whole 30 this fits in (minus the dairy).Image result

GREEK MEATBALLS WITH AVOCADO TZATZIKI

MEATBALLS

  • 1 LB. Ground lamb (you can use beef)
  • 1/2 Medium red onion, diced
  • 2 garlic cloves, minced
  • Zest of 1/2 lemon
  • 1 Teaspoon dried oregano
  • 1 Teaspoon ground coriander (optional)
  • 1/2 Teaspoon ground cumin
  • Sea salt and pepper to taste

 

AVOCADO TZATZIKI

  • 1 Avocado
  • 1 Medium cucumber (English has no seeds) cut in half
  • 2 Garlic cloves
  • 1 Tablespoon red onion, diced
  • Juice of 1 lemon
  • 1/4 Cup Greek yogurt (if using dairy)
  • Sea salt and pepper to taste

-Combine all ingredients in food processor or blender. Blend until smooth and creamy.

-Preheat oven to 350.

-Combine all meatball ingredients and form into 1 1/2 – 2″ balls.

-Put on baking sheet and bake for 25 minutes.

Serve with tzatziki sauce.

SERVINGS: 4 (6 MEATBALLS;1/4 CUP SAUCE); CALORIES: 348; PROTEIN: 21gr.

*You can chop up the meatballs and put them on a salad with the tzatziki sauce. You can serve the tzatziki chunky and not put in processor.
