Super Food Cookie

INGREDIENTS

1 cup gluten-free rolled oats
1/2 cup oat flour
1/2 cup dried cranberries, raisins, or other dried fruit of your choice
1/2 cup unsalted pumpkin seeds

1/4 cup ground flaxseed
1 tablespoon chia seeds
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
Large mashed banana or 1/2 cup unsweetened applesauce

3 tablespoons melted coconut oil
3 tablespoons coconut nectar or honey
2 tablespoons unsweetened almond milk

 

INSTRUCTIONS

  1. Preheat the oven to 325 degrees

  2. In a bowl (large) mix together the oats, flour, dried fruit, seeds, flaxseed, chia seeds, cinnamon, baking powder, and salt

  3. Stir in the coconut oi, mashed banana, honey or coconut nectar, and almond milk

  4. Let the mixture sit and rest for 5 minutes (this allows time for the chia seeds and flaxseeds to bind together)

  5. If your dough is too thick add in almond milk

  6. Scoop dough with ¼ cup on a lined baking sheet

  7. The cookie do not spread a lot so once scooped, gently press down the dough

  8. Bake for 15-18 minutes or until they are golden on the edges

  9. Cool on wire wrack and enjoy!
