Perfect V-Day Dessert for 2
This flourless chocolate almond cake is perfect for Valentine’s Day. We couldn’t think of a better way to end your dinner! (well maybe there’s one thing that might top the cake… nah, we’ll take the cake!)
The recipe comes together in about an hour requires and is a naturally-sweetened, heart-healthy treat. This cake is inspired by a Couple Cooks, but in honor of American Heart month, we’ve turned this into the heart-healthy version. We’re typically a strawberry fan when it comes to adding fruit with chocolate, but we could not resist the antioxidants that blueberries provide. And including almonds to the mix adds protein and nutrients to this already enticing dessert.
Last but not least, the dark chocolate is rich in fiber, improves blood flow and lowers blood pressure, and is also a power source for antioxidants.
Flourless Chocolate Almond Cakes
— A Couple Cooks
Serves: 2
Ingredients
½ cup almond meal
3 tablespoons butter
3 tablespoons honey
⅓ cup dark chocolate chips
1 egg
¼ teaspoon cinnamon
1 pinch kosher salt
1 pinch cayenne (optional)
1 cup blueberries
Directions
Preheat oven to 350°F.
Fill a large skillet halfway with water and bring to a simmer. Place 3 tablespoons butter, 3 tablespoons honey, and ⅓ cup semisweet chocolate chips in a heat-safe bowl (metal or glass). Once the water is simmering, turn off the heat and place the bowl of chocolate in the water, then stir until
In a medium large bowl, beat one egg with a whisk. Then add ½ cup almond meal, ¼ teaspoon cinnamon, 1 pinch of kosher salt, 1 pinch of cayenne pepper, and the chocolate mixture and stir to combine.
Butter two 5-ounce ramekins. Pour in the batter, and bake for 35 minutes until a toothpick comes out nearly clean.
Don’t forget to top with blueberries!
