Energy balls are basically the best thing to happen to the snack world. They’re balanced, bite-sized, and easy to make…I mean, what more could you ask for? Pack these peanut butter energy balls in your bag before a busy day, and you’ll tackle your to-dos feeling nourished, full, and happy.
Ingredients
1 1/2 cups oats, instant
1/2 cup nut butter of choice (I used a combo of cashew, almond, and sunflower butter, but feel free to use peanut butter!)
1/2 cup pumpkin puree
1/4 cup chia seeds
1/4 cup honey
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 cup coconut, shredded
Dark chocolate chips to taste
DIRECTIONS (SO EASY)

1) Mix the ingredients together.

3 ) Refrigerate for an hour or freeze for future use.
