Quick & Easy Breakfast
Asparagus Omelette
- 1 Egg + 3 Egg Whites
- sliced asparagus
- 1 oz. crumbled goat cheese or cheese of your choice
- sliced grape tomatoes
- cooking spray
-Spray nonstick skillet with cooking spray.
-Add asparagus and tomatoes, if using, and cook on medium heat for about 1 minute.
-Add egg/egg whites.
-Sprinkle on cheese and cook for another minute or two until beginning to set.
-Serve immediately and enjoy…I have been enjoying this with a half of a grapefruit which are delicious this season.
