To Our Valued Members,

We have been notified of a proposal for a car wash to be built on the property of Limoncellos’ restaurant, adjacent to our club. We at Healthy Fit are concerned about the problems that a busy car wash would introduce for our members, for motor vehicles using the Boston Post Road, for cyclists, for residents and for children walking to and from school. Car wash customers would line up along the Post Road as they wait their turn to get washed. This will block the right lane for all users, and make it dangerous for cyclists, who will have to veer out into the travel lane. The line up along the Post Road will make parking there difficult for health-club users, and could also block access to the health club. Idlers will pollute the air, creating an unhealthy condition for all of us. Waiting cars will likely block the sidewalk as well.

Trim Down Your St. Patty’s Day Dinner!

Simple tips to keep in mind while preparing your corned beef and cabbage:

Buy the leanest beef you can find and trim off as much fat as possible before cooking
The longer you cook the corned beef brisket, the more tender it will be. Bring the water with the beef and seasonings to a boil then simmer for at least one hour per pound. When done insert a fork into the meat piercing through to the center.
Use a pot large enough to cover the meat fully and have room to add vegetables later.
Always cut the corned beef in thin slices, diagonally across the grain.
Corned beef comes with a seasoning packet. This is a good choice of spices. The spicier the better.

Cooking: When the meat is about a half an hour away from being done, start adding your vegetables.
Add chopped potatoes, celery, baby carrots and cabbage  The more vegetables the better many people also like to add onions or turnips.
Fill up on the corned beef and cabbage so you won’t have any room for that Soda Bread and Guinness!

Looking for a healthier alternative to your favorite Appetizer? Try this delicious recipe for the popular Spinach Artichoke Dip dish!

Directions

Spray a medium pot with nonstick cooking spray. Add garlic and onions and cook over medium heat until they’re translucent, above five minutes.  Put thawed and drained frozen spinach in food processor and pulse a few times to chop. Add artichokes and pulse a few more times. The mixture should be chunky. Add spinach and artichokes to pot, along with cream cheese, oregano, red pepper and lemon juice.

Heat until bubbly, then add parmesan cheese, salt and pepper to taste.

Member Spotlight – February 2011

Annie Rotundo

Rye, NY      Age 24     HF Member  2 years

After graduating Siena College in 2009, it was only natural for Annie to begin the next step in furthering her education. She had always known that she wanted to work in a school but was now ready to explore the different directions her passion for education could take her. In the fall of 2009 she enrolled in Manhattan College’s Graduate Program where she also worked as a grad assistant for the Dean of Students.

A former high school athlete – she was always active but after 4 years of college life, Annie was more than ready to get back into shape. Shortly after graduating Siena she moved home and joined Healthy Fit. “I really had no excuse, I could come before work or after class and found myself getting into a routine” she says. “This fall while finishing my masters thesis, working out was the only thing that kept me sane!” While taking classes Annie has created bonds and developed motivational networks that have aided in this transitional time in her life. “I’ve never had as much energy as I do now and am hoping to kick it up a notch before summer! If I’m feeling unmotivated, I know taking a class will give me that extra push.”

Effective February 14th!

First off, we would like to take this opportunity to thank you for your membership.  We are sincerely grateful that you have chosen Healthy Fit to be a partner for your healthy lifestyle.

We are, however, aware that because of our popularity and increased seasonal demand at certain peak hours, there have been some bottlenecking issues.  We have already taken steps to address the areas of the club most affected by making the following changes:

· As of Feb. 14th, we are adding 6 classes per week and staggering other classes in order to ease up the congestion both in the locker room and in the parking lot.
